November, 14, 2015 –  Get a box of GF pancake mix and add extra water or oat milk…easier!!

Variation:  Add 1/2 cup pumpkin from can, or applesauce to 2 cups mix.

 First the crepes:

  1. Add ½ c. water into blender and add 3 TBS. Chia Seeds – soak for 20 minutes
  2. Get out electric griddle and heat to 375 degrees, or get out two or three skillet type pans to turn on when batter is ready – preferably the non-stick ceramic coated ones ($20 at Rite Aid and Fred Meyers – the ceramic coating is green). Get out oil and other ingredients.
  3. Add 1/3 c. GF Oats in blender and blend 1-2 minutes or until smooth
  4. Open and add the contents of one capsule of Coral Calcium powder
  5. Add 1/3 c. Arrowroot Starch
  6. Add 1/3 c. Apple Sauce – blend
  7. Add 1/6 c. Tapioca Starch
  8. Add 1/3 c. Apple Sauce – blend
  9. Add 1/6 c. Hemp Powder, blend until smooth, add water if necessary until it can pour and be runny enough to spread out to  make 1/16” to 1/8 “ thin crepes)

Store excess in a stack in a glass container with clear covering (so you see them and think of them) in the fridge for the week or freeze.

Spinach Filling

  1. Put 1/3 c. water in pan or skillet – heat on medium high
  2. Add 4 c. fresh baby organic spinach
  3. Cover and steam until leaves soft – check after 7 minutes
  4. Add 3 TBS hulled hemp seeds (small and light like sesame seeds with green flecks)
  5. Add 4 TBS nutritional yeast flakes ( only 1 TBS unless you get out in the sun alot and or also take acidophilus to offest yeast growing in your body!)
  6. Add 2 tsp. balsamic vinegar
  7. Add 1/2 – 1 tsp. Braggs Liquid Amino Acids (GMO-Free soy sauce), or pinch of salt,
  8. Stir…

— Fill crepes and add a slice of avacado.  Mmm, tasty!
